Tuna & Butterbean Salad


Ever since my holiday to Spain I have been on a salad craze! The crunch and freshness is delicious. This recipe is literally two steps.


Serves 2


Ingredients:

  • Tin of tuna, drained

  • 400g butter beans, drained and rinsed

  • Handful of cherry tomatoes

  • 1 onion

  • 1 pepper

  • 200g penne pasta

  • Green beans

  • Handful of rocket


For the dressing:

  • 125g Greek yoghurt

  • Tsp olive oil

  • Tsp lemon juice

  • 0.5tsp Dijon mustard

  • 0.5 clove garlic

  • Salt and pepper to taste


Instructions

  1. Diced the pepper, onion and mix in a bowl with tuna, butterbeans and cherry tomatoes.

  2. Mix the greek yoghurt, olive oil, lemon juice, dijon mustard, garlic clove and salt and pepper to make the dressing.

  3. Mix gently to combine and and serve straight away.
