Packed with vibrant veggies, tender prawns, and a zesty lemon twist, this light yet satisfying meal is bursting with Mediterranean flavours. Quick to prepare, it’s the perfect nourishing dinner when you need something delicious in no time!
Serves 4-5
Ingredients:
2tbsp olive oil
2 garlic cloves
1 red chilli
300g linguine pasta
200g sugar snap peas
22 king prawns
12 cherry tomatoes
Spinach
For the dressing
2tbsp fat-free fromage frais
2tsp caster sugar
Juice of 2 limes
Method:
Make the dressing by mixing 2 tbsp formage frais, grated zest and juice of 2 times and caster sugar.
Season with salt and pepper.
Cook the pasta according to instructions on the pack.
Add the sugar snap peas.
Heat 2 tbsp olive oil in a wok.
Add the garlic and red chilli.
Cook until golden.
Add in king prawns, stirring occasionally until they turn pink.
Half the cherry tomatoes and add to the pan and cook until soft. Season with salt and pepper.
Serve with a mixed salad.
