Honey Soy Chicken

This recipe is one of my favourites! This quick and easy dish features chicken tossed in a fragrant blend of ginger, garlic, and soy sauce, balanced with a touch of honey and zesty lemon. Served with fluffy brown rice and steamed broccoli, it's a nourishing, flavourful meal

that's perfect for busy weeknights when you want something quick and tasty without the hassle!

Serves 4 and takes about 30 minutes to cook.

Ingredients

  • 4 chicken breasts, trimmed and cut into 2-3cm cubes

  • 2 tbsp plain flour

  • 40g piece of ginger, peeled and finely grated

  • 4 garlic cloves, finely chopped

  • 6 tbsp soy sauce

  • 5 tbsp honey

  • ½-1 lemon, juiced

  • 1 tbsp sunflower oil

  • Cooked rice (brown)

  • Steamed broccoli

Method

  1. Toss the chicken cubes in the plain flour until evenly coated.

  2. Heat the sunflower oil in a large pan over medium-high heat.

  3. Add the chicken cubes and cook until browned on all sides, about 5-7 minutes.

  4. Add the grated ginger and chopped garlic to the pan, and cook for another 1-2 minutes until fragrant.

  5. Stir in the soy sauce, honey, and lemon juice. Reduce heat to medium and cook for another 5-7 minutes, until the chicken is fully cooked and the sauce has thickened slightly.

  6. Serve the honey soy chicken over cooked rice, with steamed broccoli on the side if desired.
