As a Registered Dietitian constantly exploring easy yet wholesome breakfast options, I understand the importance of variety.  As much as I love overnight oats and eggs sometimes I need a change and this berry French toast is the PERFECT solution, keeping mornings exciting and your taste buds delighted!

This is a balanced breakfast, combining low glycaemic index (GI) carbohydrates from the wholegrain bread, protein from the eggs in the mixture and vitamin and minerals from the burst of berries, creating a breakfast masterpiece that's as nutritious as it is delicious. Best of all, it takes just 15 minutes to whip up, making it perfect for busy mornings when you need a quick and nourishing meal.

Ingredients

Serves 1

  • 2 slices wholegrain bread

  • 1 egg

  • 60mls milk

  • Drop of vanilla extract

  • ½ tsp cinnamon

  • ½ cup berries

  • Optional: maple syrup/honey


Instructions

  1. Prepare the Egg Mixture: In a shallow bowl, whisk together the egg, milk, vanilla extract, and cinnamon until well combined.

  2. Coat the Bread: Dip each slice of wholegrain bread into the egg mixture, ensuring it's evenly coated on both sides.

  3. Cook the French Toast: Heat a non-stick skillet over medium heat and add a small amount of butter or oil. Cook each slice of bread for 2-3 minutes on each side, or until golden brown and crispy.

  4. Serve: Transfer the French toast to a plate, top with a generous serving of mixed berries, and drizzle with maple syrup or honey for a touch of sweetness, if desired.
