  • 30g oats

  • 1 banana

  • 2 eggs, beaten

  • 1 tsp baking powder (gluten-free if coeliac)

  • 1 tbsp of milk

  • Pinch of cinnamon

  • Drop of vanilla extract

  1. Mash the banana in a bowl until smooth.

  2. Stir in the beaten eggs, milk, baking powder, cinnamon, and vanilla extract until the batter is smooth and creamy. Stir in the oats.

  3. Heat a large non-stick pan over medium heat and lightly grease with oil. Once hot, pour a ladleful of batter onto the pan. Cook for 1-2 minutes on each side, or until golden brown. Repeat with the remaining batter.

  4. Top your pancakes with your favourite toppings! Whether it's fresh berries, a drizzle of maple syrup, or some chopped nuts, the choice is yours!

  • Chocolate Chip Banana Pancakes: Add a handful of dark chocolate chips to the batter.

  • Nutty Banana Pancakes: Stir in some chopped nuts such as walnuts, pecans, or almonds for added crunch and protein. Nut lovers will appreciate the extra texture and flavour that nuts bring to the pancakes.

  • Spiced Banana Pancakes: Enhance the flavour of your pancakes by adding a pinch of ground spices like nutmeg, cloves, or ginger to the batter. These warm spices complement the sweetness of the banana and add a cozy, aromatic touch to your breakfast.

  • Fruity Banana Pancakes: Instead of topping your pancakes with fresh berries, try adding them directly to the batter. Blueberries, raspberries, or diced strawberries all work well and add bursts of juicy sweetness to every bite.

Some tips.. from a Dietitian
